Reducing Canada's Sodium Intake
According to the federally mandated Sodium Working Group, the average Canadian consumes 3,400 mg of sodium per day - more than double what we need. The group recently released the Sodium Reduction Strategy for Canada with 27 specific recommendations for reducing sodium intake among Canadians. In this issue we look at the group, it's recommendations, and what meat processors need to know to help lower Canada's sodium intake.

Identifying Genes to Combat Costly Poultry Disease
Necrotic enteritis (NE) is the most common disease encountered by poultry farmers today and is estimated to cost the international poultry industry US$2 billion each year. The disease is currently controlled by the prophylactic use of antibiotics, a controversial practise that has now been banned in Europe - and Canada's poultry industry is worried similar registration could implemented here. However, new research has identified the gene clusters likely responsible for this deadly disease and is bringing the research one step closer to developing effective controls.
